葡萄酒最早的發源地是以色列。而以色列的釀酒歷史可追溯至聖經時代，即西元前1250年摩西帶領猶太人出埃及開始算起。耶穌於最後晚餐亦以葡萄酒作飲料。
以色列本屬於地中海型氣候，從南到北、高山與平地、日間與夜晚的氣溫都有明顯的不同， 土壤也會跟著地理環境上的變遷而產生不同層次的改變。靠近以色列北部的迦俐俐與戈蘭高地 因土壤質地良好且肥沃，而又因高海拔平均都約在800m~1,500m的關係所以種植出來的葡萄相對於 其他地區品質優良甚多，單寧與其所釀製出來的葡萄酒香氣更為明顯。
