材料及份量:
急凍雞腳 1磅(新鮮或冰鮮雞腳更佳)
沙薑粉 30~40克(超市細樽裝約1/3份量)
鹽 2湯匙
生抽 2湯匙
紹興酒 2湯匙
蒜頭 數棵(去衣輕拍扁)
清水 1公升

製法:

1.先將雞腳解凍後汆水煮熟一次(如怕腥味可加2湯匙紹興酒汆水多一次)
2.將已汆水的雞腳用水喉水沖洗乾淨
3.用剪刀將已熟的雞腳去爪
4.煲滾1公升水後加入沙薑粉、鹽、生抽、紹興酒及蒜頭
5.滾10分鐘後熄火,蓋上煲蓋浸30分鐘後即可進食(浸得越耐越入味)
