材料: 豆腐 1件(切小塊)冬菇 5隻髮菜 20克枝竹 40克荷蘭豆 50克(撕去硬邊)木耳 20克粉絲 1小扎 甘筍 120克(去皮,切片)南乳 1大磚水 2杯紹興酒 1湯匙薑 2片(切幼絲)蔥 3棵(切段)調味: 生抽 2茶匙糖 1湯匙米酒 1茶匙生粉 1/4茶匙麻油 少許 1.冬菇及粉絲分別用水浸軟,冬菇去蒂,榨乾水分,粉絲略剪,瀝水,備用;髮菜、枝竹及木耳分別浸洗淨,木耳剪成小塊,甘筍片與木耳分別放入滾水略灼,盛起,洗淨,備用。
2.於瓦煲內,燒熱2湯匙油,爆香薑絲及蔥段,拌入南乳同爆香,再加入冬菇、髮菜、木耳同兜炒,灒酒後,加入水,以慢火煮約10分鐘,再下甘筍、豆腐、及枝竹,轉大火煮至滾,加入拌勻調味料後,下荷蘭豆拌煮勻,即成。
