1.清洗雞翼.
2.戴膠手套/用保鮮袋包著手, 把香茅醬撈勻雞翼, 然後放入雪櫃醃足最少三小時.
3.多些油避免貼底, 先開中火把油滾起, 再轉細火, 雞翼平放鑊上, 一分鐘反轉每隻雞翼一次, 以免燒焦.
4.用鑊鏟在雞翼中間切一切, 令雞翼入面能有熱氣進入加快熟透, (用鑊鏟方便過用刀背, 不用洗刀). 間中把鑊轉一轉, 避免油積在中央而邊位沒有油. 煎大約十分鐘至金黃色
