花膠公肚身較厚而邊薄,表面有長坑紋,花膠則厚度平均,而兩者售價可相差一半,若是加工壓成的波板形花膠或是花膠,一經烹調便容易溶化,不似花膠公般口感「彈牙」。

色澤帶微黃,肉質豐厚結實為最佳,花膠更有雄肚和雌肚之分,分別取自雄魚及雌魚的魚鰾,香港人較喜嗜食雄肚,貪為厚身軟滑,入口不易溶化,相反國內人士卻鍾情食雌肚,認為薄身較腍,
