謂分子料理(Molecular Cuisine),就是把食材以不同烹調方式及加入其他不同物質,將原有食材重組成另一個不同形態,但就保留其味,好像貌似魚子醬的,食落原來是哈蜜瓜,又或者把本是液態的湯加工變成泡沫,分子料理早在八十年代在歐洲已有科學家提出

分子料理,簡單地說,就是利用各種水狀膠質物,達到延緩香料顆粒沈澱、分離油水甚至特殊造型等功能,等於是將食物分子結構重組,例如荔枝魚子醬,魚子醬外觀咬下卻是滿溢荔枝的香氣,完全顛覆視覺與味蕾。
