材料:黃豆160 克;水﹝I﹞1750 毫升;石膏粉4 克;水﹝II﹞ 125 毫升;砂糖 40克;熱開水 40 毫升 作法:(1) 黃豆洗淨後用清水浸 4 小時,取出瀝乾。 備用。(2)將瀝乾的黃豆放入攪拌機內,加入水﹝I﹞打爛,隔去渣,倒入煲中,用中火煮滾,待用。 (3)預備一個較深的器皿,放入石膏粉及水﹝II﹞,攪勻,隨即將作法(2)的材料快速地倒進器皿內,蓋好,切勿移動器皿,待 5 至 10 分鐘後﹝在此期間,用熱開水把砂糖攪勻﹞。(4) 5 至 10 分鐘後,舀起浮在豆腐花面上的泡沬,把豆腐花盛起,放在碗中,加入糖水即可。
